Noodles and rice, you'll get nowhere with your potatoes mrgins. Seafood is good if you like it. Pad Thai (noodles with prawn or other meats) a traditional number you can't go wrong with. If you like something spicy try a green curry or massaman curry. Chicken, beef and pork dishes all feature prominently.
Don't you live in the States though? Thai food on offer there may be a bit different to here, like Indian restaurants in the UK bear little resemblance to food in India.
