Skate!

Headline from today's paper:
"North Sea in crisis as skate dies out"

I never knew that Skate was a bottom-dweller though:eek:

The common skate has become extinct in the North Sea

Posted by:

Excuse me, but there's nothing common (raja clavata) about our Skate!

More raja stellulata, I'd say.

Posted by: Pistike

delicious with butter and capers or in a light roux based sauce with gruyere finished under the grill with breadcrumbs.

I realise that, of course, but I'm just worried that our Skate might be in danger.

And does she want to sue for being called a bottom-dweller?

Cliché-man appears later in the article:

Euan Dunn, fisheries policy officer for the Royal Society for the Protection of Birds, said: "This is the last chance saloon.... like harvesting apples by cutting down the trees.... like applying sticking plaster to a serious injury....now drastic surgery is needed."

Those pesky beam-trawlers

I can never work this one out. The skate is in trouble, but the ray's are doing well. For a fish from the same family, it does not make sense. Most of the time, ray is sold as skate anyway. Thornbacks, stingers and the rest are caught all the time in the Thames estuary. Friends of mine, go to north west Scotland skate fishing, and they catch ok.

I would like to announce the launch of the Save Our Skate campaign. All donations must be in the form of liquid alcoholic refreshments, plus any requirements for emergency mouth to mouth resuscitation must be instantly granted by any and all handsome and charming men.

I always avoided telling this story out of respect to SK8 but seeing as Sunny Fan seems so preocuppied by fish, I shall indulge you all in little known facts about skate.

Firstly Elisabeth David whose culinary writing inspired countless retired army officers to open many hideous little bistros on Britains coastline throughout the 1970s states quite correctly that skate is the only fish that benefits in flavour and texture from being kept in the fridge for 2 or 3 days before it is consumed.

Given that really fresh fish is practically impossible to find in the UK, skate is a good choice for this reason.

The other interesting fact about skate is that they posses genitalia remarkably similar (so I'm informed) to those of the female of the species.

When I worked at LWT years ago we used to take an ad agency called AMS on an annual fishing trip on the Thames estuary.

My old boss nailed a skate to the mast and gave it a good seeing to.

Which was nice.
