Stews and casseroles

Perfect meal for this time of year, going to make a beef stew tonight, trying to decide whether to add red wine or beer. I will be adding a few crushed juniper berries to mine, maybe a teaspoon of black treacle too (makes it nice and rich). Naturally whichever I add it will be tasty, but even better tomorrow.

What are your stew/casserole tips?

Slow cookers are great for this. Put them on in the morning before work, ready when you get home - got a chicken stew on the go at the mo.

Oooh - this thread has got me making a stew/casserole on Sunday now! Love them (Irish grandparents - so brought up on them) - so any tips and new methods for me to try appreciated too.

Is there any difference between stewing beef, braising steak, casserole steak etc? The supermarkets generally have about three variations on the theme at different prices, I suspect they are all the same thing.

Braising steak is the most tender I find, think it's chuck steak really.
Although I suspect you're right and they probably are the same thing - there was a watchdog-type programme on this a few weeks back.

I have a slow cooker for those "tougher" meats (cheap cuts) all day is nice, I also have a Le Cruset cassorole dish for better meats and less time, and both are straight to the table.............i'm hungry now

Glass of decent red wine, lots of thyme, onions, garlic and a spoonful of HP sauce. 3 hours at 150. Yum!

Use a slow cooker, add some all spice to the usual herbage, a dash of red wine, and use red onion.

A multitude of types of veg in it is always good too.

I generally flour and season the meat (beef casserole steak today), brown it off then remove it from the pan, deglaze the pan with a little of the beer or wine (red wine today), pour this in with the stock.

Leek, celery and carrot are the holy trinity, whatever else you make your stew from these three are the basic building blocks. Sweat them in the pan with some oil

After that it's a free for all, this evening's creation will include chopped bacon, swede, garlic, parsley, thyme, bayleaf, tomato puree, juniper and black treacle and more wine.

Todays will be cooked on the hob rather than in the oven, I think this makes it a stew rather than casserole.
