Been making a fair few veggie stews lately using up left over stuff from our Able & Cole weekly veggie delivery.

Obviously a lot quicker than meat versions and no slow cooker needed. Still lovely though, and I like to chuck in as many different veggies as possible.

Fry off some onions, garlic and rosemary and then add in the heavier veg like sweet potatoes and squash etc, then later loads of softer veg like cabbage, asparagus, leeks, cauliflower etc A small tine of tomatoes, good veggie stock and a load of fresh basil and yum.

Or sometimes more of a Thai type affair with chilli, lemongrass, Thai spices and cocunut milk.

Gonna try a kinda Hungarian paprika heavy hitting affair this Sun.

Chicken stew tonight, three chicken legs skinned and jointed into thigh & drumstick. Floured and browned off the chicken then added leeks, carrots celery, shallots, garlic, thyme, stock and white wine.

Dumplings just been added (with parsley & lemon zest), will be served with spinach.

Love dumplings. Haven't had them in a couple of years I think.

I had a stew last night, fat Toulouse sausages from the Boucherie down the road, cannelini beans, fresh parsley, garlic, savoy cabbage, peas, spinach, broccoli.

Spring-influenced as it's been nice this week, serve with heavily buttered and seasoned jacket potato.

Neck of lamb stew with whatever veg particularly root veg, add some pearl barley, a tablespoon of brown sugar and slow cook, make your own suet dumplings and add 20 mins before the end. Make a large pot and eat it all week. Will put hairs on your chest and muscles on your muscles.

We're making a stew for Mother's Day this Sun.

Going to cook it on Sat and then let the flavours develop and re-heat round at my parents on Sun.

As I don't eat meat I've not got a lot of experience in meat stews. Any one got foolproof recipes they can recommend? Maybe an Irish Stew?

Cooking for six.

I received rep for this post earlier in the thread, so someone must have enjoyed it, it is easily adaptable for whatever you are stewing/casseroling. Cooking times vary depending on what meat you use, for stewing beef I would suggest 90 minutes to two hours, chicken thighs are good in a stew (skinned but lefton the bone) and cook in about 45-60 minutes.

Today's slightly autumnal weather inspired me to make a chicken stew, I added some smoked paprika & chopped bacon to my normal meat/carrots/celery/leek/garlic/herbs/stock/wine or beer combination.

It was bloomin marvellous.
