Has it been mentioned on here that Pitt Cue has closed down and gone into administration? I know their book got mentioned a lot previously.

My attempt at shoulder of lamb,coated with a jerk seasoning. Cooked at 150c for 3 hrs then wrapped in foil and left for a further 4 hrs
Bit of pork belly on the side

It shredded lovely and was served in a soft toasted bread with a honey/bbq sauce. Was gorgeous

Terrific work.

I tried pheasant and it worked out fine - largely because a kamado keeps the moisture in the meat. Wrapping in decent bacon is good insurance.
I have direct-cooked duck breast which is more or less steak my mind so fairly simple if a bit flamey, next time I'll go low and slow for a more smoked flavour.

Picked this up in France, will give it a spin later in the week. Not sure if it is intended as a form of kindling or for flavour. I believe vine wood burns hot. Steak it is then.

Went for it and got the Kamado Joe classic 2

First try, a whole chicken in there at the moment

The amount of smoke it puts out at the start was incredible, hopefully wont piss off the new neighbours!

If you go for the Joe,you should get the cover with it.You could always get a cheaper cover.

You won't regret it.I was the same as you and did a chicken first go.Due to not knowing the smoke output of the added wood the chicken was inedible,tasted absolutely disgusting.Now trying a few more things.

Cheers buddy will do. I am a total novice and threw in a few handfulls of socked apple wood chips. If its inedible the mrs will not be impressed considering the money i spent!

Cant work out how to post a pic but first effort was decent, a little too smokey but the chicken was wonderfully cooked and moist throughout, my temp probes to thank more than my skill. Will do again bit with less wood chips for sure.

My first attempt at burnt ends was a failure.But I salvaged a decent meal out of it.
Ended up with beef n beans which tasted great and the meat was tender and at the same time had some lovely chewy bits.It will be repeated

Beef had a Levi Roots Jamaican rub with added cayenne pepper.

I failed today with pulled pork, got impatient when the temp got stuck at 162 for about an hour and turned it right up. Smoked pork was nice enough but a little dry but i learnt for next time to leave myself a good more few hours cooking time.

Was raining here in Dublin when I started burning the coals. Got heavier as I prepped the salad. Gamble has paid off as its stopped raining. I’m half cut and the meat is almost there.

We all learned that the hard way.

Also good to leave an extra hour or two for the meat to sit. If I have the time I double wrap the foil wrapped meat in a towel and place it in a cooler for as long as I can wait. Really helps.

Just got a roll of butchers paper and can't wait to try it on a brisket rather than foil.
