Change of plan for the egg tonight.
It's cow v deer! Got my hands on a kilo of boneless fallow haunch. Tasting v a 50 day aged white park bone in rib eye. Should be interesting

Josper.
Finally had a ribeye from a famous Josper oven. Never meet your heroes. Very disappointed, mainly as it came just over medium (asked for M/R) and it was cooked in an iron pan/skillet and not across the charcoal. I don't think the chef keep opening the door helped either. Mrs JMF's lobster from the same oven was good though. The George in Rye, for reference.

Interesting debate. Ageing removes juice but adds flavour... Serious flavour. Give me a dry aged piece over 30 days all day long.

It depends. Big Green Eggs are great if you want all the versatility they provide. If you just want a smoker then a Weber Smokey Mountain is an outstanding smoker and about half the price.
